Xiao Wan's Roasted Chicken

The chicken was slowly cooked, with gradually increasing temperatures, to get the best results, an incredibly moist, and flavorful, roasted chicken.

The chicken was placed in the baking pan, with all of the sauteed elements, and drizzled with honey.

Before placing in the oven, diced onions, garlic, and ginger were sauteed before the chicken was put into the pan, seasoned with salt, pepper, paprika, cajun seasoning, ancho chili pepper, brown sugar, and sake, quickly coating and searing on all sides... helping to seal the flavor in.
