Xiao Wan's Shrimp Latkes
I used leftover mashed potatoes, mixed with fresh shrimp, onion, and celery, (all chopped), an egg, flour, and Panko bread crumbs. I will try to remember exactly how I usually make them and add the recipe. This dish was one of the happy accidents in Xiao Wan's kitchen.
